Strawberries for Ice "Cream"

We don't do dairy well in our family, and buying non-dairy ice cream is expensive (not to mention, usually soy, which I like to avoid). We found this recipe in our Blendtec recipe book and modified to be dairy-free.

You'll need:


  • 1.5 cups coconut milk (editor note: try this coconut milk recipe to make your own!)

  • 1 TB of lemon juice

  • 1-2 TB sweetener (we use evap. cane juice, agave, or honey)

  • 1 lb frozen strawberries (about 3 cups)




Throw all this in your blender or food processor until it's smooth! It tastes just like strawberry cheesecake to us. We tend to eat it right away so I don't have a picture of the finished product and I'm not sure how well it freezes. (You could probably use an ice cream maker too so that it freezes without turning into a solid block.)
