Homemade Breakfast Sausage

We love homemade breakfast sausage, and here's why: If you read the label of your standard grocery store brand of breakfast sausage, you will be amazed at what the manufacturers think is appropriate to put in breakfast sausage. Corn syrup? Sodium nitrate? Vague mention of "spices" which probably includes MSG? No, thank you, I'd prefer real food!
If you are anything like me, you'll be happy to hear that making your own sausage is quite easy and so satisfying. First thing to do is make up a batch of the seasoning mixture. Then, when you are hankering for some sausage to go along with those eggs in the morning, or you want to make a batch of Sausage Balls, all you have to do is mix a tablespoon of seasoning into a pound of ground pork!
- 4 Tbsp salt
- 4 Tbsp maple sugar (substitute brown sugar if you can't find maple sugar)
- 3 tsp black pepper
- 2 tsp rubbed sage
- 2 tsp thyme
- 1/2 tsp marjoram
- 2 tsp ground nutmeg
- 1 tsp cayenne pepper
- 4 tsp paprika
Mix all ingredients together and store in a glass jar. This recipe makes a little more than a cup of seasoning mixture.
To make the sausage, add 1 Tbsp of mixture to each pound of ground pork, mixing well. Shape into patties, stuff into casings for links, or use in your favorite recipe calling for breakfast sausage.
