Mac'N Squeeze (Pasta and Butternut Squash Recipe)
This pasta and butternut squash recipe was contributed by one of our readers, Lindsay Wyglendowski. The recipe was created and coined by her local CSA farmer!

- 1 lb whole wheat (or other favorite) pasta
- 1 medium butternut squash
- 1 cup milk or coconut milk
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- fresh ground pepper
Bake the squash whole or halfed, until soft. Scoop the seeds out, the puree the meat until smooth.
Cook the pasta to desired taste.
On the stovetop, combine squash, milk and spices and simmer until smooth and hot.
Mix the pasta and squash and serve with parmesan cheese sprinkled on top.
